Saving old varieties of apples soon to die out such as Anisam Mamula, Peatxa, etc.... was of utmost importance. Working with the Sagartxea Association, we planted an organic orchard and now produce an excellent apple juice full of incomparable flavors. As members of the Etztigar cooperative, we produce a traditional Basque sparkling cider which is dry yet fruity. You can discover and taste our products in La Bastide Clairence's café and restaurants.

The Frachou family tells us: "Our family has existed in La Bastide Clairence for several generations. We breed and raise a local variety of beef cattle called "blonde d'Aquitaine" in addition to raising red headed Manech sheep, also a local breed, known for its milk for making brebis (sheep) cheese. It is a common practice in this region to raise these two types of animals. It allows us to best care for the beautiful countryside around us. We offer you local farm products, which are prepared using traditional recipes. Actually, during your visit to the Basque Country, you can fill your basket with a selection of our beef cuts ready for the barbeque. We also make the famous "axoa" which uses veal and beef flavored by Espelette pepper. In addition, you will discover the specialties of the house: saucisson and dried beef sausage! We invite you to come and see our livestock farm. Be sure to give us a call before you venture out: that will avoid your finding a closed gate if we are not around to welcome you".

On the ancestral farm, we raise milking cows and ducks. During the winter months we feed the ducks in the southwest traditional method for increasing the size of their livers and then prepare the enlarged livers for sale. We begin the specialized corn kernal feeding process when the ducks are around 15 weeks old. All of our production is intended for direct sale to customers.
- from November to March: fresh duck pieces the customers will pick up and continue to prepare at home
- all year: home produced canned duck confit and foie gras

We belong to the Basque Country Farm Producers Association and are committed to the Idoki charter, which imposes strict quality standards for farm products. We are happy to sell you our products at the farm. Young and old are welcome to visit. For information or to place orders do not hesitate to contact us: we will gladly return your call.

By using a copper cauldron, the young shepherd makes an excellent cheese using the fresh milk (non-pasturized) from his red headed Manech sheep. Once you've tasted it, you will agree that it doesn't take years to produce fine flavor. Be sure to ask him to show you his Basque pigs, raised in the fresh, open air. The kids will love it !
